cayenne Origin: Mexico, Southwest U.S., Caribbean, India, other Equatorial Regions.
Description: The heat of cayenne peppers can range widely, from as mild as 30,000 SU in Indian crops to as much as 100,000 SU in the African varieties. Flavor varies little from source to source and remains crisp, even tart, in character.
Applications: Cayenne is popular in Italian, Mexican, and Tex-Mex cuisines.  Just a pinch can add a kick of flavor to soups, sauces, marinades and even eggs.  Try adding a bit to hot cocoa or to chocolate cakes!
