fennel Origin: Worldwide - mostly in the northern hemisphere
Description: Fennel has tiny, light green, curved fruits with a sweet and refreshing licorice-anise flavor.
Applications: Fennel seed is used with meats, poultry, and seafood. Many cultures in the Indian subcontinent and the Middle East incorporate fennel seed into their culinary traditions.  In the west, fennel seed is a very common ingredient in Italian sausages and northern European rye breads.  Note that fennel becomes even more flavorful when toasted!
