Icelandic Christmas Cake

Ingredients:
1 cup white sugar
3/4 cup butter
2 eggs
2 1/2 cups all-purpose flour
2 teaspoons baking powder
3/4 cup milk
1/2 cup raisins
1/2 teaspoon lemon extract
1/2 teaspoon cardamom flavored extract
Directions:
- Preheat oven to 350 degrees F (175 degrees C). Grease one 11 inch loaf pan.
- Cream the butter or margarine and the sugar until light and fluffy.
- Add the eggs one at time beating well after each one.
- Stir in the milk, lemon and cardamom flavorings.
- Stir in the flour and the baking powder.
- Sift a little flour over the raisins then stir them into the batter.
- Pour the batter into the prepared pan.
- Bake at 350 degrees F (175 degrees C) for 55 to 60 minutes.
