| Applications: | Used widely in Scandinavian and French cooking, juniper berries are added to meat dishes, especially wild birds (including thrush, blackbird and woodcock) and game meats (including boarand venison). They also season pork, cabbage, and sauerkraut dishes and are an essential ingredient in making gin. Juniper berries need to be crushed before using. |
